Table Travellers – Week 8

Hallo!

It’s been a while since our last Table Trip but now the holidays are over we’re back into it!

Today we made Olliebollen which is a type of Dutch donut but we thought they tasted pretty much like normal donuts. We decided to make them because of a photo that friend of ours posted when they were in the Netherlands on holiday and we thought they looked pretty good.

My nephews were staying with us last week when we were going to make them but we realised the batter took 4 hours to rise so we couldn’t do it with them that day. They are back with us tonight but Mum and I got started earlier and made the mixture early so it had time to rise before they got here after their school day finished and we cooked them once they arrived.

We all loved them and the mixture made a LOT so we all got to eat heaps of them with some packed away for lunches tomorrow.

I think we should definitely make them again!

OLLIEBOLLEN – Dutch donuts

Olliebollen

4 & 1/2 teaspoons dry yeast
1/2 cup warm water
1 teaspoon sugar
1/2 teaspoon cinnamon
1/2 teaspoon salt

Mix the above ingredients together in a LARGE bowl and leave till the yeast gets bubbly.

3 tablespoons butter|
1 cup sugar
3 cups milk
3 eggs

Melt the butter and turn the heat off when melted. Mix the sugar, milk and eggs into the butter in that order so the eggs don’t ‘cook’ when they arrive in the hot butter.

6-7 cups plain flour

Stir the butter mixture into the yeast mixture. Then add the flour one cup at a time mixing each time. It will be balfway between a dough and a batter.

Set dough aside to rise for 3-4 hours.

Heat vegetable oil (not olive oil as it doesn’t heat to a high enough temp) in a large pan. Gently drop dessert-spoons-ful into the hot oil. They cook quite quickly and will need turning. We only got 11-12 in the pan at a time before needing to begin turning and taking them out.

Drain on paper towel. Also – test their doneness before you get too far into the cooking. If a little raw – make them smaller or turn the oil down a little.

You can roll in sugar & cinnamon or dredge with icing sugar. We may have done both! 🙂
